Finest Malt from our own maltery in the Black Forest region of Germany is grinded in our malt mill. Various different malt types (Pilsner, Munchner, Wheat, Caramel, Black, and Smoked) are the base for our unique beers.
All our beers are brewed according to the Reinheitsgebot (German Purity Law) of 1516. Special mashing procedures (double decoction system) are used for Pilsner and are uncommon for microbreweries. The finest German hops from the Hallertau are added to the boiling wort, which is then rapidly cooled to prepare it for fermentation.
Our own patented yeast strain converts the brewing sugars into Carbon Dioxide and alcohol after it is added to the chilled and aerated wort. The beer is then stored for four weeks to carbonate and mature it naturally at 32 degrees. Allowing the beer to mature to its peak taste as well as natural carbonation are uncommon in mircobreweries. The matured beer is filtered afterwards and served perfectly fresh.
